I know what you're thinking. Healthy cake: are these two terms not juxtaposing? Now in my heart, I agree. If you fancy cake, eat the fluffiest, chocolatey, creamiest slice you can find and treat yourself. But sometimes I find myself craving a cake like snack that doesn't quite carry the rich sweetness and weight of your traditional indulgent gateaux.
That's where this recipe comes in. Introducing to you my latest discovery: Yoghurt Cake! All you need is one bowl and a few select ingredients to whip up a healthy alternative to your regular sponge cake. It is also incredibly versatile and you can add various bits and bobs to cater it to your tastes. On this occasion I opted for dried raisins and sultanas, giving my cake the appearance of a traditional 'Spotted Dick' [cue childish giggles]. This is a favourite choice but feel free to embrace your inner baker and experiment as you see fit.
I also recommend making this with family - it's certainly child friendly. I personally managed to rope in my Mum and we had great fun!

THE RECIPE
Ingredients
1 cup Greek yoghurt
2 cups self raising flour
1/2 cup honey
2 eggs
1/2 lemon, zest
1 cup dried fruit
Optional 1/2 tsp vanilla essence
Step 1 – Preheat oven to 180C° and grease a loaf pan with butter
Step 2 – The fun bit before you can actually dig in: mix all ingredients together in one bowl!
Step 3 – Carefully scrape batter into your loaf pan - messy business so easy does it.
Step 4 – Place in oven for 40 - 55 mins [depending on how hot your oven gets]
Step 5 – Once done, place on a cooling rack and resist diving in straight away.
Step 6 - Serve on its own or with a side of jam, peanut butter, custard - whatever your taste buds desire really!
